This month's Food Chain cookery workshop, we were joined by local Spanish teacher Joaquín Folgado Casado, who chose to share with us a few recipes for his favourite tapas dishes. Collectively we made our dinner of Gazpacho – cold tomato and red pepper soup, Tortilla de Patatas – a classic potato tortilla, and Leche Frita – little fried cubes of condensed milk covered with sugar and cinnamon. 
 
 
A note from Joaquín – 
Undoubtedly, tapas are probably the most worldwide known Spanish cuisine. Personally, tapas is not just Spanish food and drink, but it is also sharing my spare time with friends or family within a tapas bar atmosphere while having confidences. I showed you how to make three delicious simple Spanish platers: Gazpacho, Tortilla de Patatas and Leche Frita, all of them could be included in any tapas bar.
 
Gazpacho, as a starter or drink, is a healthy raw soup which preserves vitamin C in peppers and tomato, vitamin E from tomato and extra virgin oil, as well as antioxidants such as lycopene from tomato.
 
As our main we made Tortilla de Patatas, which is a Spanish salty yellow pie made of fried potatoes and egg. This dish is everywhere in Spain, as a tapa, pincho (small snack), or meal in most bars and as a very typical snack or dinner treat in many homes. When I am home, there is always tortilla de patatas night and most Spaniards think their mother or their grandmother cooks the best one. 
 
Finally, to close the menu I chose a delicious dessert from the north of Spain, Leche Frita, which my grandma usually made for special occasions or during the months of February, May and April.
