June Food Chain was all about the comfort food that is mashed potato. Fi Thomson and her daughter Mina Brennan shared a few of their favourite comforting mash recipes that warm their bellies and hearts, including hot smoked salmon mash, crushed herby tatties and 'eggs in a nest'. This Food Chain was for simple delicious food where mash was the star of the show!

We love mash! Mash can be a meal and sometimes we forget that. We have our mash in the form of 'eggs in a nest' – a recipe passed down from Fi's Grandma that involves a soft boiled egg in a nest of mash -, cheesy mash, the traditional Irish mashed potato fish of Colcannan, or just new potatoes crushed with butter and herbs. Fi's mum always told her that you don't need to worry if your child will only eat mash, as it really is a complete food.
