Miroslav Podrabsky lives on a farm in Insch, but originally hails from the Czech Republic. For February's cookery workshop, he shared with us how to make Ovocné Knedlíky – Czech fruit dumplings of fruit filled balls of dough, using delicious recipes from his grandmother. Miroslav is keen to shift the tradition of our main meals being savoury, so for this Food Chain, our dinner was sweet!
A note from Miroslav:
I have come across many great dishes from all around the world, and there seems to be a pattern: it is the rule that the main course must be sour or salty… otherwise it is called pudding. Why? Fruits are a great source of vitamins as much as vegetables are, and main meals made with fruit can be a great alternative for vegetarians or vegans or for anyone that's open minded. Salt and sweet don't have to contradict themselves – take a look at “salted caramel” for example. It is all about balance and potential… although I'm not talking about pineapple on pizza!
For this Food Chain we used a special recipes of Miroslav's late grandmother. You can have a look at the recipe here.

Home Programme
This event is part of the Home Programme, a series of regular community events taking place at Deveron Projects programmed by our Art & Community Worker. The Home Programme celebrates local knowledge and experience, and explores what it's like to live and work in and around Huntly. It includes Friday Lunch, as well as the monthly Food Chain cookery workshop and a stall at the Huntly Farmers' Market. If you'd like to contribute to the Home Programme, or know someone who you'd love to hear from, then get in touch with our Art & Community Worker Jess on jess@deveron-projects.com.
