Back for our first Food Chain workshop of 2022, we were learning two recipes from Andriana Bhayangkari and Marwanih Ariestut! They showed us how to make the Indonesian dishes of Grilled Aubergine with Coconut Milk (Terong Bakar Santan) and Fern Leaf Aralia Salad with Grated Coconut Topping (Urap Cakra-Cikri). This was a special hybrid Food Chain… read on!

You can read Wani and Rina's recipes here!

Rina and Wani both live south of Jakarta, Indonesia and have been a part of our collaborative project Our Commons: Food Resources [Harta Kampung Kota Kita] with Indonesia based collective Labtanya. Our Commons: Food Resources have been discussing, re-imagining, and experimenting on how our food resources shape urban/rural spaces, crisis, and community resilience. Up until now we've been talking about food, and now it's time to make some food! Rina and Wani will be joining us in Square Deal via Zoom, and with time difference we will be making our lunch as Rina and Wani make their dinner. We will be experimenting with and finding out how we can make these dishes with the availability of ingredients in Scotland, whilst also learning about two delicious dishes!

A note about the dishes –

Grilled Aubergine with coconut milk (Terong Bakar Santan) is Rina's family's signature dish and is usually served at family gatherings at her home. Eggplant with various ways of cooking is a favourite of Rina's family! Wani's chosen dish, Fern Leaf Aralia Salad, is an everyday fish for her family, whilst also being a common dish at family and community gatherings. Besides being really tasty, it also not complicated to make.

We hosted this workshop in person in Huntly, with our cooks zooming in from Indonesia. This Food Chain took place at Square Deal and due to the time difference, at a different day and time to normal as well, on Sunday 13th February, 12-2pm.
