Our first foray in prepping local-global levantine dishes will be learning the art of stuffing turnips! Known throughout the middle-east as Mehshi – stuffed vegetables are an elegant, homely and insanely satisfying way to consume seasonal produce. Onions, potatoes, tomatoes, vine leaves, cabbage leaves, aubergines, courgettes…all get stuffed in one manner or other, with spiced minced lamb, rice and/or bulgar wheat.
To mark Burn's Supper with our kitchen's 50/50 philosophy, we will be stuffing local turnips with haggis, which bears a close resemblance to traditional Mehshi stuffing.
